As I continue my search for a cauliflower crust pizza that is just as delicious as the Fathead pizza I’ve made at home, the search has led to nothing but disappointment.
A few weeks ago I thought I had finally found a cauliflower crust pizza in the frozen food aisle at my local Walmart, but one glance at the nutritional information on the back of the box quickly ended my excitement.
The first number I look for, of course, is the number if carbs in the crust. The number 29 jumps out at me immediately. Well, a bit high, I think, but maybe all of the fiber in the cauliflower will help. Nope. Only 1 gram of fiber is listed. A closer look at the nutritional label tells me that the 29 grams of carbs is just for 1/3 of one crust. So the entire crust contains a total of 87 carbs and 3 grams of fiber. If it makes you feel any better you can say the crust has 84 net carbs.
The reason for the such a high-carb count in a crust that is described as a cauliflower crust pizza is because there is a lot more in the crust than just cauliflower. In fact, cauliflower is just one of many other ingredients making up the crust. When you bite into one of these “cauliflower” crusts you will be ingesting a few ingredients you have probably been doing your best to avoid; brown rice flour, rice flour, corn starch, tapioca starch, corn starch, and yeast.
A real cauliflower crust pizza might, one without all of that starch, would have just a fraction of those carbs, about 3 net carbs per piece, or 24 net carbs for the entire crust. You can find the recipe here. Stick to this homemade pizza and you’ll be fine. Look for a shortcut at your local grocery store and be prepared to be disappointed.
So before you hastily grab that Caulipower Pizza and tossed it in your shopping basket, take a few moments and read the nutritional label on the back of the carton. If you’re serious about counting down on your carbs, you’ll put that “cauliflower” pizza right back where you found it.
